While this version of our whole milk is pasteurized, it has not been homogenized, which means the cream in the milk will separate and rise to the top. That's why we call it "Cream-Top." The separation of non-homogenized milk is completely natural and does not indicate spoilage. Folks who prefer minimally processed foods prefer Dakin Cream-Top milk and enjoy its good old-fashioned appearance and consistency. Many Cream-Top fans like to skim the cream off the top to use in their coffee or tea or for other purposes.
